I had about 10 juicy strawberries ripe and ready to be used strawberries just perfect for a special desert, my vegan strawberry mini tarts recipe. My strawberry plants surprised me just in time for my daughter’s birthday.

As a tradition, I bake something special for each of my kids’ birthdays, but this year presented a “real” challenge as my daughter embraced a vegan lifestyle. So, after a couple of not-so-great attempts at creating vegan delights together, I faced a struggle with tart shells falling apart. Ingredients:

For the Tart Shells:

  • 1 cup all-purpose flour
  • 1/4 cup coconut oil, solid
  • 2 tablespoons maple syrup
  • 2 tablespoons cold water

  • 1 cup vegan cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

For Topping:

  • Fresh strawberries, sliced
  • Mint leaves

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Tart Shells:
    • In a bowl, combine flour and solid coconut oil. Use a fork or pastry cutter to create a crumbly texture.
    • Add maple syrup and cold water, mixing until a dough forms.
    • Divide the dough into mini tart pans, pressing it evenly to form tart shells.
    • Prick the bottom of the shells with a fork to prevent puffing during baking.
  3. Bake Tart Shells:
    • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
