Vegan Pumpkin Chocolate Chip Muffins recipe

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup or agave nectar
  • 1/3 cup melted coconut oil or vegetable oil
  • 1/4 cup unsweetened almond milk or any plant-based milk
  • 1 teaspoon vanilla extract
  • 1 cup dairy-free chocolate chips

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. Prepare Wet Ingredients: In another bowl, mix together the pumpkin puree, maple syrup or agave nectar, melted coconut oil, almond milk, and vanilla extract.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Add Chocolate Chips: Gently fold in the dairy-free chocolate chips into the batter.
  6. Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool and Enjoy: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
