2. Make the Tart Crust:

  • In a food processor, combine the flour and salt. Add the chilled vegan butter and pulse until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together. Be careful not to overmix.
  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

3. Prepare the Filling:

  • Once the roasted garlic has cooled, separate the cloves and peel them. Cut the cloves into small pieces.
  • In a small bowl, combine the roasted garlic pieces, fresh thyme leaves, salt, and black pepper. Mix until well combined.

4. Assemble the Tarts:

  • Preheat your oven to 375°F (190°C) and grease a mini tart pan.
  • Roll out the chilled tart dough on a lightly floured surface to about 1/8 inch thickness. Use a cookie cutter or a glass to cut out circles slightly larger than the tart molds.
  • Press the dough circles into the greased tart molds, trimming any excess dough.
  • Spoon the roasted garlic and thyme mixture into each tart shell, spreading it evenly.

5. Arrange the Fig Toppings:

  • Arrange the sliced mission figs on top of the filling, pressing them gently into the mixture.

6. Bake:

  • Place the tart pan on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the figs are softened.
  • Remove the tarts from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

7. Serve:

  • Serve the vegan mission fig and roasted garlic mini tarts warm or at room temperature. Enjoy as a delightful appetizer or a tasty snack!
