Tart is always my go-to desert, and fig is one of my favorite fruits. fig pie tart that our hotel in Barcelona served as part of breakfast buffet. So, here is a perfect easy to make vegan fig tart recipe for you to try.  I modified my original tart recipe to make it vegan and my family loves it even more than original tart. 

You can use mission figs, green Ischia figs or even yellow figs. Yellow figs are extremely sweet when ripe. So, If using yellow figs, reduce the amount of sugar powder to use only 1/4 of a cup when making the tart shell dough.

Can I use regular flour Instead  of almond ? 

Absolutely, but promise to try almond flour first. Almonds (or pure almond flour) and figs is one of the best combination in baking. Almonds enhance figs flavor. You can add a tea spoon of almond extract into the dough if planning to use regular flour.

Can I make it non-vegan? 

Of course, just use any non-vegan butter instead.

Substitutions 

Experimenting is always great! If you don’t have fig jam, use apricot or plum ( or even raspberry) jam , just make sure to push it through a fine metal mesh strainer first.you can also substitute sugar powder with white granulated sugar no problem . 

How to make Vegan Fig Tart

Start from fresh green figs. Just like I  mentioned earlier, you can use any fig, but green ripe figs work the best for baking in my opinion. They are super juicy, but at the same time not too sweet, so they taste great in combination with fig glaze. 

Vegan Fig Tart recipe

INGREDIENTS

1 2/3 cups almond flour

1/2 cup vegan butter

1/3 cup sugar powder 

10- 12 large green figs

1/2 cup fig jam 

1/2 cup cold water 

INSTRUCTIONS

Baking the Tart shell 

1. In the separate bowl mix together sugar powder, room temperature vegan butter and almond flour. Place the dough in the fridge for 45 min.

  1. Slice figs. I prefer to cut them into 1/3 inch slices, but you can do quarters or even calves if you like. 

3 . Prepare glaze. Mix well water with fig jam and put the mixture through the mesh drainer. Once drained place the glass in the fridge for 15-20 minutes. 

  1. Bake the tart shell. Preheat the oven 350F.  Press the chilled dough firmly into the in the tart pan, make sure it’s evenly spread at pubs the edges. Work fast when the dough is cold. Bake for 15 minutes or until the lightly golden. Cool completely before filing.
  2. Vegan Fig tart assembly. Spread evenly 2-3 table spoons of the cold fig glaze on the bottom of the tart shell. Place sliced figs in he shell, make it pretty, cover the figs with  glaze. Depending on how ripe your figs are you might have some glaze leftovers. Put the tart in the oven and bake for 15 – 20 minutes until figs are cooked. Cool for 1 hour before serving.

How to serve vegan tart

Cool your vegan fig tart completely before serving or, even better, keep it in the fridge overnight. 

Sprinkle a bit vegan (or not vegan) feta cheese cheese crumble  for a savory flavor.
