How to make Rosemary Lemon Avocado Cookies Recipe
Ingredients:
Dry Ingredients:

- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon finely chopped fresh rosemary
Wet Ingredients:
- 1 medium ripe avocado, mashed (about 1/2 cup)
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest (about 1 large lemon)
- 1/4 cup unsweetened applesauce (egg substitute)
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and finely chopped rosemary. Set aside.
- In a large mixing bowl, beat the mashed avocado, granulated sugar, and brown sugar until smooth. Stir in the applesauce, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture. Stir until a soft dough forms. Avoid overmixing.
