Quinoa, zucchini, and carrot patties recipe
Ingredients:
- 1 cup cooked quinoa
- 1 medium zucchini, grated
- 2 medium carrots, grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup nutritional yeast (optional, for added flavor)
- 1/4 cup breadcrumbs (gluten-free if needed)
- 1 tablespoon ground flaxseeds + 3 tablespoons water (flax egg)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- In a small bowl, mix together the ground flaxseeds and water to make a flax egg. Let it sit for about 5 minutes to thicken.
- In a large mixing bowl, combine the cooked quinoa, grated zucchini, grated carrots, chopped onion, minced garlic, chopped parsley, nutritional yeast (if using), breadcrumbs, olive oil, ground cumin, smoked paprika, salt, pepper, and the prepared flax egg. Mix until well combined.
