  • 1 cup cooked quinoa
  • 1 medium zucchini, grated
  • 2 medium carrots, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup nutritional yeast (optional, for added flavor)
  • 1/4 cup breadcrumbs (gluten-free if needed)
  • 1 tablespoon ground flaxseeds + 3 tablespoons water (flax egg)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a small bowl, mix together the ground flaxseeds and water to make a flax egg. Let it sit for about 5 minutes to thicken.
  3. In a large mixing bowl, combine the cooked quinoa, grated zucchini, grated carrots, chopped onion, minced garlic, chopped parsley, nutritional yeast (if using), breadcrumbs, olive oil, ground cumin, smoked paprika, salt, pepper, and the prepared flax egg. Mix until well combined.
  4. Take a small handful of the mixture and shape it into a patty using your hands. Place the patty onto the prepared baking sheet. Repeat this process with the remaining mixture, making about 10-12 patties.
  5. Bake the patties in the preheated oven for 25-30 minutes, or until they are golden brown and crispy on the outside.
  6. Once baked, remove the patties from the oven and let them cool slightly before serving.
  7. Serve the quinoa, zucchini, and carrot patties with your favorite dipping sauce or alongside a fresh salad for a delicious and nutritious meal.
