With eight of these exotic gems in hand, I decided to recreate a favorite summer treat: Passion Fruit Bars. Having previously experimented with modifying a lemon bars recipe, I found that the bars turned out a bit too firm. So, I experimented a bit and the result was just perfect.

Passion Fruit Bars Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 cup fresh passion fruit pulp (strained to remove seeds) – about 7-8 small passion fruits
- Powdered sugar for dusting
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, combine 2 cups of flour, softened butter, and 1/2 cup of powdered sugar. Press this mixture into the bottom of the prepared baking dish to create the crust.
- Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, 1/4 cup of flour, baking powder, and a pinch of salt until well combined.
- Gently fold in the fresh passion fruit pulp into the egg mixture.
- Pour the passion fruit mixture over the baked crust and return it to the oven.
- Bake for an additional 25-30 minutes, or until the center is set.
- Allow the bars to cool completely before dusting with powdered sugar and cutting into squares.
Storage Instructions:
Store the Passion Fruit Bars in an airtight container in the refrigerator for up to 3-4 days to maintain their freshness.
