Marinated Cherry tomatoes recipe

Ingredients:

  • 2 pints cherry tomatoes
  • 1 red bell pepper, sliced
  • 2 celery stalks, sliced
  • 2 tablespoons fresh thyme leaves
  • 1/4 cup balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ¼ cup of virgin olive oil

Instructions:

  • Rinse the cherry tomatoes and slice them in half. Place them in a large bowl.
  • Add the sliced red bell pepper and celery to the bowl with the cherry tomatoes.
  • Sprinkle the fresh thyme leaves over the vegetables.
  • In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and sugar until the sugar and salt have dissolved.
  • Pour the balsamic vinegar mixture over the vegetables in the large bowl.
  • Gently toss the vegetables with the marinade until they are evenly coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld together.

Before serving, give the marinated vegetables a good stir to redistribute the marinade.

Serve the marinated cherry tomatoes as a side dish or as a light lunch.
