Ingredients:

- 1 teaspoon salt
- 1 teaspoon sugar
- ¼ cup of virgin olive oil
Instructions:
- Rinse the cherry tomatoes and slice them in half. Place them in a large bowl.
- Add the sliced red bell pepper and celery to the bowl with the cherry tomatoes.
- Sprinkle the fresh thyme leaves over the vegetables.
- In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and sugar until the sugar and salt have dissolved.
- Pour the balsamic vinegar mixture over the vegetables in the large bowl.
- Gently toss the vegetables with the marinade until they are evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld together.
Before serving, give the marinated vegetables a good stir to redistribute the marinade.
