This jam-filled cookies recipe is my go to recipe when it comes to Christmas baking. They’re a big hit every year. But there’s a funny thing that happens – the first two batches always seem to disappear as soon as they’re out of the oven!
Jam-filled cookies recipe
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- Jam of your choice (strawberry, raspberry, apricot, etc.)
Instructions:
Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat.
Cream Butter and Sugar:
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add Egg Yolks and Vanilla:
- Add the egg yolks and vanilla extract to the butter-sugar mixture. Beat until well combined.
Mix Dry Ingredients:
- In a separate bowl, whisk together the flour and salt.
Combine Wet and Dry Ingredients:
- Gradually add the flour mixture to the butter mixture, mixing until a dough forms. Be careful not to overmix.
Form Dough Balls:
- Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, leaving space between each cookie.
Make Indentations:
- Use your thumb or the back of a spoon to make a small indentation in the center of each dough ball.
Fill with Jam:
- Spoon a small amount of jam into each indentation, being careful not to overfill.
Bake:
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Cool and Enjoy:
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy your delicious jam-filled cookies with your favorite hot beverage!
