Israeli Hummus is a dip or spread made from chickpeas (garbanzo beans), tahini, lemon juice, garlic, and olive oil. It is a popular Israeli and Mediterranean dish that has gained popularity worldwide for its taste and health benefits.

Israeli hummus history

In Israel, hummus has a long and complex history. Chickpeas have been grown in the region for thousands of years, and hummus has been a staple food in the Middle East for centuries. However, the modern Israeli hummus industry is a relatively recent development, dating back to the early 20th century.

One of the earliest hummus factories in Israel was established in the 1930s by an Arab-Israeli entrepreneur named Mohammed Abu Shukri. Shukri’s hummus restaurant in the city of Acre (Akko) became famous for its high-quality hummus, and his recipe remains popular to this day. In the years following Israel’s establishment in 1948, the country saw an influx of Jewish immigrants from all over the world. Many of these immigrants brought their own food traditions with them, and as a result, Israeli cuisine became a fusion of different culinary influences.

Difference between Mediterranean and Israeli hummus

Mediterranean hummus typically uses more tahini, which results in a creamier texture and a nuttier flavor. It is also typically served with olive oil and paprika. Jewish hummus, on the other hand, often includes the addition of cumin and is sometimes made with more lemon juice for a tangier taste. Additionally, traditional Israeli hummus may be garnished with whole chickpeas, parsley, or chopped onions.
