This balsamic fig pasta recipe was inspired by my awesome coworker. A while ago he had pasta with figs in semi sweet balsamic in a fancy restaurant in upstate New York  and he loved it. ‘Such I weird combination. I have to try it one day’ I thought to myself. I made it today and it tastes ammmazing! So, here is my new addition to my Vegan recipe collection – my very own balsamic fig pasta recipe. 

What figs should I use?

Honestly, doesn’t matter as long as they are ripe. The key for this recipe is sweet figs. I used figs misled and the recipe came out great. It’s end of fig season here in California. So, I ran out of black figs. I will make it with green figs only next time .

What type of pasta should I use? 

Same. Doesn’t matter. Penne is my go to pasta but anything , even spaghetti, would do.

Ingredients

1 table spoon olive oil

3 cups cooked pasta of your choice

6 table spoons balsamic vinegar

1/2 tea spoon salt

Pinch of ground black petter

4/5 leaves of fresh oregano 

8-10 fresh ripe figs

Instructions:

  1. Pup olive oil, balsamic vinegar and sugar, salt and pepper in a pan, mix well. Turn on the heat and bring liquid to boil. Reduce heat and cook for 5-7 mins constantly steering until the liquid start thickening. 
  2. Add pasta, mix well and cook 3-5 mins on medium- low heat. 
  3. Let pasta cool for 5-7 minutes. Add fresh minced oregano. 
  4. Serve and enjoy. I guarantee you will love it!
