Ingredients:

  • 6 small ripe but firm pears
  • 1 cup vegan gorgonzola cheese (you can you can substitute for blue cheese or even feta crumbles)
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil
  • Pinch of salt
  • 2 tablespoons chopped walnuts or pecans(optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the pears in half lengthwise and use a spoon to scoop out the seeds and core, creating a hollowed-out center for the filling.
  3. Place the pear halves cut-side up in a baking dish or on a baking sheet lined with parchment paper.
  4. In a small bowl, mix together the vegan gorgonzola cheese, chopped nuts, maple syrup, olive oil, and a pinch of salt until well combined.
