Here’s my super simple and easy-to-make Asian cucumber salad recipe for you. It’s perfect as a refreshing appetizer or even a light meal, especially during the hot summer months. Recently, we had a couple of overgrown cucumbers in our garden, and I was determined to put them to good use, sticking to my no-waste mentality.
Asian cucumber salad recipe
Ingredients:
- 2 large cucumbers, seeds removed, sliced
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 tablespoon toasted sesame seeds
- 1 red chili pepper, thinly sliced (Optional : seeds removed for less heat)
- Optional: chopped green onions or cilantro for garnish
Instructions:
- Slice the large cucumbers lengthwise and remove the seeds using a spoon. Then, thinly slice the cucumber into half-moon shapes.
- In a mixing bowl, combine the rice vinegar, soy sauce, sugar, and sesame oil. Stir until the sugar dissolves.
- Add the sliced cucumbers to the bowl and toss until well coated in the dressing.
- Sprinkle the toasted sesame seeds and sliced red chili pepper over the cucumber mixture.
- Toss the salad again to distribute the sesame seeds and chili pepper evenly.
- Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a final toss and garnish with chopped green onions or cilantro if desired.
