After a fantastic crop of passion fruits this year, I decided to incorporate them into my banana bread. On my first try, I added just two teaspoons of passion fruit juice, but the flavor wasn’t strong enough. This time, using juice from two passion fruits really brought out the tangy and aromatic essence of the passion fruit. How to make Vegan Passion Fruit Banana Bread

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup fresh passion fruit juice (about 2 passion fruits)
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup or agave nectar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped nuts or vegan chocolate chips (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, combine the mashed bananas, passion fruit juice, vegetable oil, brown sugar, maple syrup, and vanilla extract. Mix well until all ingredients are fully incorporated.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using).
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. If desired, fold in the chopped nuts or vegan chocolate chips.
  5. Pour and Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

To store your vegan passion fruit banana bread, first allow it to cool completely on a wire rack to prevent moisture buildup.
